Texas Caviar Pie Dip (Unique Recipe With Avocado Cream Cheese)

This Texas Caviar Pie Dip really packs in a lot of flavor into each and every bite.

Key to Success #1 – Make the Black Bean Salsa in Advance

The black bean salsa in this recipe is a combination of black beans, picante sauce, red/yellow and green bell peppers, onion, cumin, and garlic.

Be sure to rinse and drain the black beans well.

You can use either red or yellow bell peppers in addition to the green peppers. Or you can use both!

It would make a very pretty presentation if you used all three colors. You can save a few coins by just using one or the other.

After you mix up the black bean salsa, cover it and let it hang out in the fridge until you’re ready to serve it.

The longer it sits, the more the flavors will marry.

Key to Success #2 – Mash Avocados at Serving Time

You’ll want to wait until you’re ready to serve your Texas Caviar Pie to cut and mash your avocados.

Peel the avocados and remove the seed, then add the lemon juice and mash well.

The lemon juice will prevent the avocados from turning brown.

Stir in the softened cream cheese, the remaining 1/4 cup of picante sauce and the salt and you’ve got the bottom layer of your pie ready for layering.

Key to Success #3 – Layer It Up

Start by spreading the avocado mixture in an even layer in the bottom of your pie plate.

It’ll be creamy and easy to spread.

Then spoon your cold black bean salsa over the top of the avocado mixture.

I like to leave a little bit of the avocado peeking out around the sides of the pie pan.

Now you’re ready to serve this delicious Texas Caviar Pie with your favorite tortilla chips or Fritos.

  • Combine beans, 3/4 cup picante sauce, red & green bell pepper, onion, cumin and garlic. Mix well. Cover and chill.
  • Before serving, combine mashed avocados, cream cheese, remaining 1/4 cup picante sauce and salt. (Use lemon juice on avocados.) Mix until smooth.
  • Spread evenly into bottom of 9″ pie plate. Spoon chilled bean mixture over avocado mixture. 
  • Serve with tortilla chips.

I found this recipe in the newspaper in the 90's and have been making it regularly since. Though that recipe didn't tell where to use the lemon (thanks). This dip is so-o-o delicious that can barely stop myself from eating the entire "pie", my mother taught me to share. The garlic, onion, cumin, bring a great earthy flavor to the salsa and beans over the creamy avocado. It's always a hit.
