Taco Scoops are a super simple appetizer to bring a little Mexican flair to your next party. Pile all your favorite taco toppings on top of a Tostitos Scoops chips and serve. It’s as easy as that!

🔑 Key to Success #1 – Drain the Ground Beef Well

These Taco Scoops appetizers are super easy to put together.

The only thing that needs to be cooked is the ground beef.

I like to cook mine in a skillet on the stovetop but you can use your favorite method.

The main thing to keep in mind is that the ground beef needs to be drier than normal.

If you have a lot of juice in your ground beef, it will inevitably leak out into the Tostitos Scoops chips and could make the bottoms soggy.

And nobody wants soggy bottoms!

A lot of times, I don’t add the extra water to the ground beef like the taco seasoning calls for.

I just mix it in with the ground beef and stir it well.

It all comes together perfectly, and the ground beef is full of taco flavor.

🔑 Key to Success #2 – Pick Your Favorite Toppings

Pick your favorite taco toppings! You can really use any taco toppings that you like in these appetizers.

You can even use different toppings on the same serving platter.

I always use the Scoops chips then the taco meat then shredded cheese but anything else is optional.

Sometimes I do the whole shebang and use lettuce, tomato, sour cream, and Picante sauce.

Sometimes I just add tomatoes and sour cream.

With the kids, sometimes I do just the taco meat and the cheese. It’s really up to you and your guests.

🔑 Key to Success #3 – Use a Separate Plate

Now, this is a big one.

When you’re putting together the Taco Scoops, put the chips on a separate plate then fill them with all your goodies.

Don’t move them to your serving platter until they’re completely ready.

Sometimes, when you’re putting the appetizers together, some of the ingredients may fall onto the plate.

Using a separate plate allows you to keep your serving platter clean while you’re making your appetizers.

I’d recommend that you put together these Taco Scoops right before you are planning to serve them.

This is just to ensure that your chips stay crispy.

We’re draining the meat well, but there’s still some moisture in it that could soften your chips.

Ingredients

  • 1 pkg Tostitos Scoops tortilla chips
  • 1/2 pound ground beef
  • 1 Tbsp taco seasoning
  • 1/2 cup shredded fiesta blend cheese
  • 1/4 cup salsa (optional)
  • 1/4 cup sour cream (optional)
  • 1/2 cup shredded lettuce (optional)
  • 1/2 cup tomato, finely diced (optional)
  • 1/4 cup green onion, finely diced (optional)

Instructions

  1. In skillet over medium-high heat, brown ground beef for 5 minutes. Add taco seasoning and 1/4 cup of water, if needed. Continue cooking 5 minutes, or until liquid is evaporated and beef is fully cooked. Remove from heat. Drain if needed.
  2. Divide ground beef between Scoops chips. Top with shredded cheese and any other toppings you are using. Carefully transfer to a serving platter. Serve immediately.
