One of the secrets to this recipe is using a good, old-fashioned peanut butter brand like Jif, Skippy, or Peter Pan.

Natural peanut butter does not work well in this peanut butter mixture.

In a microwave-safe bowl, heat the creamy peanut butter and butter until they are melted then stir until the peanut butter mixture is smooth.

Add in the confectioners’ sugar, also known as powdered sugar, and stir until a thick peanut butter dough forms.

To improve convenience, I’ve recently started adding a layer of chocolate to the bottom of the bars.

This makes them easier to stack and store without sacrificing any of their irresistible taste.

When I make the bars, I line my pan with parchment paper and leave plenty hanging over the sides.

When it comes to baking, presentation is key. 

And nothing can ruin a beautifully baked treat like struggling to remove it from the pan or having it crumble into a mess. 

That’s where parchment paper comes in.

To ensure easy removal of your peanut butter bars, line the 13 x 9-inch baking dish with parchment paper before you pour in the chocolate. 

To line the dish, simply cut a piece of parchment paper that is slightly larger than the dimensions of your baking pan. 

Gently press it into the bottom and sides of the pan.

Not only does lining the pan with parchment paper make for easy removal, but it also makes cleanup a breeze. 

Once you’ve removed the bars, simply lift out the parchment paper and discard it.

Ingredients

For peanut butter filling

For chocolate topping

  • 4 cups chocolate chips divided
  • 4 Tbsp margarine divided

Instructions

Layer 1

  • Melt in microwave 2 cups chocolate chip with 2 Tbsp margarine. Stir well then spread into 9X13 pan. Chill 15 minutes.

Layer 2

  • Melt together in microwave peanut butter and 2 sticks butter. Add powdered sugar and mix well. Spread on top of chocolate layer. Chill 15 minutes.

Layer 3

  • Melt in microwave 2 cups chocolate chip with 2 Tbsp margarine. Stir well then spread on top of peanut butter layer. Chill until firm.

Notes

  • Use high-quality peanut butter brand like Jif or Skippy. Natural peanut butter does not work well for this recipe. Peanut butter filling can be shaped into balls or eggs before dipping in melted chocolate.
  • You may omit the bottom layer of chocolate on these bars.
  • Coconut oil may be used in place of the margarine in the chocolate. This extra fat will help the chocolate melt smoother and it'll be less likely to seize up when heating.
