Key to Success #1 – Start with the Coconut Glaze
The coconut glaze is really what makes this Tropical Chex Mix so special. You stat with a mixture of melted butter, brown sugar and coconut extract.
Coconut extract is what we’ll use to add the great tropical flavor to this recipe. If you’ve never used coconut extract, it’s found in the baking aisle of your local grocery store. Or you can find it online.
I’m a big fan of Watkins flavorings and extracts. They have a pure flavor without a lot of extra junk added. I get these at my local Wal-mart store but you can get them on Amazon.com as well.
Key to Success #2 – Add in Rice and Corn Chex, and Macadamia Nuts
After the coconut glaze is mixed up, you’ll add in the Rice and Corn Chex and the macadamia nuts. This is the mixture that will be baked in the oven. If your macadamia nuts are already toasted, you can arguably leave the nuts out of this mix and add them after baking.
I prefer to use both Rice and Corn Chex cereal in Tropical Chex Mix but you can use either all Rice Chex or all Corn chex. Using only one variety of Chex cereal is a great money saving idea.
Key to Success #3 – Bake It Up Low and Slow
After you cover the cereal and nuts with the coconut glaze, you’ll put it in a low oven for 45 minutes. Heat your oven to 275 degrees Fahrenheit (135 degrees Celsuis) and pour your mixture out onto a foil-covered rimmed baking pan. Cook the mixture for 45 minutes, stirring well every 15 minutes.
After 45 minutes, pour the mixture out onto a sheet of waxed paper and stir in your dried fruit. Stir to coat everything well then let it cool. And try not to eat it all before it’s completely cooled.
You can add other types of tropical fruit if you’d like. I think think dried mangoes or papaya would be really great if you can find it locally. If you add other fruit or nuts to this Tropical Chex Mix, please let us know in the comments how it turned out.

- 4 cups Rice Chex cereal
- 4 cups Corn Chex cereal
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 2 tsp coconut extract
- 1 cup macadamia nuts
- 1 cup dried pineapple
- 1 cup dried banana chips
- 1 cup dried coconut pieces
- Preheat oven to 275 degrees F.
- In large bowl, mix together melted butter, brown sugar, and coconut extract. Add Rice Chex, Corn Chex and macadamia nuts. Stir to coat completely.
- Pour cereal mix out onto parchment-lined cookie sheet.
- Bake for 45 minutes, stirring well every 15 minutes.
- Pour mixture out onto waxed paper. Add dried fruits. Mix well.
- Cool before serving.
