Key to Success #1 – Drain The Carrots

This Honey Glazed Carrots recipe starts with two pounds of baby carrots.

They are readily available in the produce section of most grocery stores.

You can use whole carrots if you’d like, either cut into coins or larger chunks.

If you use whole carrots, it could affect how long you’ll need to boil the carrots to make them tender.

You can really use any cooking method to cook the carrots before you add the sauce.

I like to boil them in a pot on the stove.

They would be great in the Instant Pot or even steamed in the microwave.

Be sure to add salt to your carrots either while they are cooking or immediately after.

After the carrots cook, you’ll want to drain the carrots well so that the honey butter sauce will not be too thin.

I prefer to use an over-the-sink colander for draining soft vegetables.

Have you seen the colanders that are collapsible?

I think those are genius for those of us that don’t have a lot of kitchen storage space but love to cook.

Key to Success #2 – Make Your Delicious Glaze

The delicious glaze for these Honey Glazed Carrots is made from honey, butter and brown sugar.

What could be better than that?

After your carrots are cooked and drained, add them back to the pot and add the honey, butter and brown sugar.

Stir the carrots well then turn the heat on medium-low and cook just a few minutes until the glaze comes together and the butter and brown sugar melts.

The carrots are already cooked and tender so you’re really just melting the glaze together.

Key to Success #3 – Consider the Microwave

If your stovetop is full of other delicious dishes, you can easily make these Honey Glazed Carrots in your microwave!

You can use a microwave-safe vegetable steamer to cook your carrots and cook the sauce in the microwave as well.

Depending on the steamer/bowl you use, you may be able to cook, drain and glaze the carrots all in one bowl.

That is a win-win-win in my book!

Ingredients

  • 2 pkgs (16 oz) baby carrots
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 3 Tbsp honey
  • salt

Instructions

  1. Pour carrots into a medium saucepan and cover with salted water. Bring to a boil over medium heat and cook about 15 minutes, until carrots are tender. Drain well.
  2. Return carrots to saucepan and reduce heat to medium-low. Add butter, brown sugar, and honey. Stir well. Cook another 5 minutes until butter is melted and sauce is combined.

Notes

Diabetic substitutions: 

  • Try reducing brown sugar to 1/3 cup
  • Try reducing honey to 2 tablespoons
  • Use less salt
