Easy S’mores Popcorn Recipe Using Microwave Popcorn

S’mores Popcorn is a super simple snack recipe that starts with a bag of microwave popcorn. We’re adding chocolate, marshmallows, and graham crackers to make one delicious treat. You’re going to love this easy option to dress up your popcorn for your next movie night.

You can use any bag of microwave popcorn and then dress it up with classic s’mores flavors.

🔑 Key to Success #1 – Any Type of Popcorn Will Do

You can use any microwave popcorn for this recipe.

It doesn’t matter if the popcorn is buttered or not. I had a movie theater buttered popcorn variety this time so that is what I used for the photos.

You can use air popped popcorn or kettle corn if you have it.

If using some other variety besides microwave popcorn, keep in mind that you will need 4-5 cups of popcorn for this recipe.

Pop the popcorn according to package directions, then allow it to cool for a few minutes while you melt the chocolate.

One of my best kitchen tips is related to preventing unpopped kernels in your popcorn treats.

This tip is simple but effective.

Take handfuls of popcorn and transfer it to a separate bowl instead of pouring from the bag.

This method will allow the unpopped kernels to stay in the bag instead of getting mixed into your treats.

🔑 Key to Success #2 – Use Caution When Melting the Chocolate

When you melt chocolate chips, you have to be really careful to not overheat the chocolate or it may seize up.

Place the chocolate chips into a microwave-safe container and heat on HIGH for 30 seconds then stir well.

Return the chocolate chips to the microwave and heat for another 30 seconds.

Remove the chocolate chips from the microwave and stir until the chocolate is smooth.

You may have to stir for a few minutes to allow the chocolate to melt, but it is worth it.

If your chocolate starts to harden and seize up, you can add about a teaspoon of vegetable shortening like Crisco, then stir until the chocolate is smooth and shiny.

You could also use vegetable oil in place of the shortening.

I do not recommend adding butter to chocolate if it has started to seize.

🔑 Key to Success #3 – Let It Dry to Avoid a Mess

Once the chocolate is fully melted and smooth, pour it over your bowl of popcorn.

Use a wooden spoon or a spatula to stir the popcorn until it is fully coated in the chocolate.

Next, break up the graham crackers and add them to the popcorn.

Be sure to make bite-sized pieces of graham crackers.

You don’t want to grind the crackers into crumbs for this recipe.

Add the miniature marshmallows and stir the mixture well.

You should have plenty of chocolate to coat the popcorn, crackers, and marshmallows.

Pour the popcorn mixture out onto a sheet of waxed paper and allow it to cool completely.

  • Pop popcorn according to package directions.
  • Place chocolate chips in a small microwave-safe bowl. Melt chips in the microwave on high power for 30 seconds. Stir well. Microwave another 30 seconds then stir until smooth.
  • Place popcorn in a large bowl (remove unpopped kernels) then pour melted chocolate over the popcorn. Stir well to coat.
  • Break graham crackers into bite-sized pieces. Stir broken graham crackers and miniature marshmallows into chocolate-coated popcorn.
  • Pour popcorn mixture out onto a sheet of waxed paper. Allow popcorn to cool completely.

Notes

If the chocolate starts to thicken, add 1 tsp of shortening or oil then stir well until it is completely smooth.
