This simple pecan candy recipe starts with a layer of graham crackers.

Get out your jelly roll pan and cover it tightly with foil.

A jelly roll pan is 15.25″ x 10.25″ and has a rim along the edges.

The rim is important because it will prevent your brown sugar mixture from running off the pan.

Line the pan with foil then butter the foil generously to prevent your treats from sticking.

To start, arrange 13 graham crackers in a single layer on your jelly roll pan.

I like to break or cut my graham crackers into squares before arranging them on the pan, but this step is optional.

You’ll want to make sure you could the graham crackers and don’t put more than 13 on your pan.

If you overcrowd the pan, you may not have enough syrup to cover all the crackers evenly.

Key to Success #2 – Use Medium Heat on the Stove

The next step is to make the delicious brown sugar syrup for your pecan pie bark.

To do this, get a medium saucepan and add the butter, brown sugar, pecans, and salt to it.

Turn to medium heat and allow the mixture to slowly come to a boil.

Be sure to continue stirring the mixture so that it doesn’t burn.

The pecans should be coarsely chopped before adding to the saucepan.

You can chop them with a knife or even just break them into pieces with your fingers.

I like chunky pecans so I usually opt to break them up by hand before adding them to the brown sugar mixture.

After the mixture comes to a boil, allow it to continue to boil for two minutes.

Once two minutes has elapsed, remove the pan from the heat and stir in the vanilla.

Immediately pour the syrup over the graham crackers and use a spatula to spread the syrup to cover all the crackers.

And make sure that the pecans are evenly distributed on the grahams.

Key to Success #3 – Bake Uncovered for 10 minutes

After the brown sugar syrup is spread all over the graham crackers, it’s time to bake!

Pop the pan into the preheated over for 10 minutes.

The candy should be bubbly around the edges and golden brown.

Remove the pan from the oven and allow the candy to cool completely before breaking it into bite-sized pieces.

If you broke the graham crackers into squares before putting them on the jelly roll pan, you may not have to break them much once they’re cool.

You can also break them into smaller pieces if you’d prefer.

  • 13 whole graham crackers
  • 1 cup butter
  • 1 cup brown sugar
  • 2 cups pecan halves, coarsely chopped
