Key to Success #1 – Use Light Corn Syrup For Ultimate Chewy Scotcheroos
Scotcheroos are a classic treat that has been a hit among kids and adults alike for decades.
They’re known for being thick and chewy thanks to corn syrup in the peanut butter mixture.
The peanut butter mixture holds this delicious bar together.
To make the delicious peanut butter mixture for Scotcheroos, you will need to combine one cup of creamy peanut butter, one cup of sugar, and one cup of corn syrup in a medium saucepan.
Heat on medium-low heat until the mixture just barely comes to a boil.
Then add six cups of Rice Krispies cereal.
Stir the mixture until the cereal is evenly coated.
If you love peanut butter flavor, this same peanut butter sauce is featured in our Peanut Butter Fritos recipe.
Key to Success #2 – Butter Up The Pan For Extra Flavor
After you’ve added the Rice Krispies to the peanut butter mixture, it’s time to spread it into a buttered baking dish.
You’ll need a 9×13-inch baking dish for this each recipe.
Butter the dish well using real butter.
The butter will add extra flavor to your Scotcheroos.
And your dessert will slide right out of the pan with ease.
Now, let’s talk about how you should butter your dish.
It’s simple and easy.
Start by taking a pat of butter and rubbing it generously onto the sides and bottom of the baking dish.
You can also use a pastry brush or a paper towel to spread the butter evenly.
Make sure to cover all the corners and edges to prevent the Scotcheroos from sticking to the pan.
It’s a small but significant step that can significantly enhance your dessert’s flavor and texture.
So, there you have it.
Buttering your baking dish is a smart and easy trick to add some extra flavor to your Scotcheroos.
Key to Success #3 – Chocolate and Peanut Butter for the Top
Chocolate and peanut butter are a match made in heaven.
When it comes to topping these Scotcheroos, there’s no flavor combination that quite compares.
The creamy, nutty flavor of the peanut butter is perfectly offset by the rich, decadent taste of the chocolate.
Together, they create a mouthwatering combination that’s impossible to resist.
Whether you’re a peanut butter lover, a chocolate enthusiast, or simply someone with a sweet tooth, this flavor pairing is sure to hit all the right notes.
If you’ve never melted chocolate and peanut butter chips in the microwave before, don’t worry—it’s incredibly easy!
Simply combine equal parts chocolate chips and peanut butter chips in a microwave-safe bowl and heat in 30-second intervals, stirring after each interval, until the chips are completely melted and smooth.
Be sure to keep a close eye on the mixture to prevent it from burning or overheating.
Once melted, the chocolate and peanut butter chips will be the perfect consistency for spreading over the top of your Scotcheroos.
Traditional Scotcheroos use butterscotch chips in place of peanut butter chips.
And of course, you can use them if you wish.
But I think the chocolate and peanut butter combo has the butterscotch beat hands down!

Don't let your sweet tooth miss out on this drool-worthy experience.
- 6 cups Rice Krispies cereal
- 1 cup sugar
- 1 cup light corn syrup
- 1 cup peanut butter
- 11 oz pkg peanut butter chips*
- 11 oz pkg semi-sweet chocolate chips
- Butter a 9x13-inch baking dish. Measure out cereal into a large bowl. Set both aside.
- In a medium saucepan over medium-low heat, combine the sugar, corn syrup, and peanut butter. Stir continuously so that it doesn't scorch on the bottom.
- When the mixture just starts to boil, remove it from the heat and pour it over the cereal. Stir to combine.
- Press the cereal mixture into the prepared baking dish.
- In a microwave-safe bowl, combine the chocolate chips and peanut butter chips. Microwave on HIGH power for 45 seconds. Stir well. Microwave for 30 seconds. Continue heating. If needed, microwave another 15 seconds then stir until smooth.
- Pour the chocolate mixture over the cereal in the baking dish and spread to cover.
- Allow to cool completely before cutting into bars.
*Traditional Scotcheroos use a combination of butterscotch chips and chocolate chips for the topping.
I like the flavor of peanut butter chips better. But you can substitute butterscotch chips if you want to.
Or you could use all chocolate chips. If you use all chocolate chips, add a little bit of shortening when melting so that your chocolate topping will be smooth.
