Ingredients

  • 6 cups Rice Krispies cereal
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 11 oz pkg peanut butter chips*
  • 11 oz pkg semi-sweet chocolate chips

Instructions

  1. Butter a 9x13-inch baking dish. Measure out cereal into a large bowl. Set both aside.
  2. In a medium saucepan over medium-low heat, combine the sugar, corn syrup, and peanut butter. Stir continuously so that it doesn't scorch on the bottom.
  3. When the mixture just starts to boil, remove it from the heat and pour it over the cereal. Stir to combine.
  4. Press the cereal mixture into the prepared baking dish.
  5. In a microwave-safe bowl, combine the chocolate chips and peanut butter chips. Microwave on HIGH power for 45 seconds. Stir well. Microwave for 30 seconds. Continue heating. If needed, microwave another 15 seconds then stir until smooth.
  6. Pour the chocolate mixture over the cereal in the baking dish and spread to cover.
  7. Allow to cool completely before cutting into bars.

Notes

*Traditional Scotcheroos use a combination of butterscotch chips and chocolate chips for the topping.

I like the flavor of peanut butter chips better. But you can substitute butterscotch chips if you want to.

Or you could use all chocolate chips. If you use all chocolate chips, add a little bit of shortening when melting so that your chocolate topping will be smooth.
