Key to Success #1 – Pick Perfectly-sized Potatoes
It’s important that you choose potatoes that are similar in size for this recipe.
Picking potatoes that are the same size will ensure that they are cooked evenly.
You don’t want some potatoes to be overcooked and some to be under-cooked.
For this Instant Pot recipe, you’ll want medium-sized potatoes, similar to what you would find in the bulk bin at your grocery store.
I’d estimate them to be about 6-7 inches long.
If you get larger baking potatoes, you’ll want to increase the high pressure cook time by a couple minutes to account for the thicker potatoes.

Key to Success #2 – Pierce the Potatoes
I always forget this step but it’s important! Dont be like me.
If you forget to pierce the potatoes, they will explode in your Instant Pot and the skin will split open.
If your potatoes burst open, they are still perfectly tasty to eat.
The skin will just be split open in some spots.
You’ll want to take a fork or a sharp knife and pierce the skin of the potatoes in 4 or 5 spots.
This will be enough to let the steam escape and keep your potatoes intact.

Key to Success #3 – Allow Natural Pressure Release
Be sure you let the Instant Pot pressure release naturally for 10 minutes.
This is an important part of the cooking time and it’ll ensure that your baked potatoes are perfectly cooked.
After the 10 minutes of natural pressure release have passed, you can go ahead and use the quick release valve to dispel the remaining pressure.

These Instant Pot Baked Potatoes turn out perfectly every time.
And then comes the fun part – picking your favorite toppings.
You can serve these baked potatoes as an easy side dish or top it with brisket or pulled pork or even taco toppings for a full meal.
