Vegetable Beef Soup is a great weeknight meal on those cold winter nights. This versatile recipe can be cooked in the slow cooker, Instant Pot, or on the stove top.
Place all ingredients in 6 Qt Instant Pot. Close lid.
Turn steam release handle to SEALING. Press the Beef/Stew button or set to pressure cook for 35 minutes. After 10 seconds, the Instant Pot will start.
When cooking cycle is completed, let steam release naturally or use the Quick Release Valve.
Notes
This Vegetable Beef Soup can be cooked in a slow cooker on low for about 6 hours or on high for about 3 hours.
