No Bake Turtle Cookies

The center of these No-Bake Turtle Cookies is made with an ooey gooey Rolo candy sandwiched between two vanilla wafer cookies. You're going to love these easy chocolate caramel cookies that are perfect for your Christmas cookie exchange or any time of year.

Ingredients
 

  • 11 oz vanilla wafers
  • 11 oz Rolo candies
  • 2 cups milk chocolate chips
  • 1 tbsp vegetable oil
  • 1/2 cup pecans, broken into pieces

Directions

  • Preheat oven to 250 degrees F.
  • Place half of the vanilla wafers bottom side up on the baking sheet. Unwrap Rolos and place one In the middle of each vanilla wafer. Bake for 3 minutes. Chocolate should be soft but not runny.
  • Remove from the oven and place another vanilla wafer on top of the candy. Press down firmly until the chocolate squeezes to the edges of the cookies.
  • Pop the sandwich cookies in the refrigerator for at least 20 minutes until firm.
  • Microwave the chocolate chips and vegetable oil on HIGH power for 30 seconds. Stir well. Continue microwaving in 20-second intervals until the chocolate is melted and smooth.
  • Dip each cookie sandwich into the melted chocolate and place them on waxed paper.
  • While the chocolate is still wet, place a few chopped pecans onto the top of each cookie sandwich. Cool completely.
