Sugar Cookie Cake Pops is a fun recipe that uses packaged sugar cookies as the base for these sweet cake pops. You can decorate them in any color combination that matches your party theme.
Place the frosted sugar and the cream cheese in the bowl of a stand mixer. Mix on medium speed until the mixture forms a thick dough. (Keep mixing - it'll all come together in a few minutes.)
Form the dough into twelve 1 1/2-inch balls. Place the balls on a waxed paper-lined baking sheet.
Melt a small amount of the candy melts, dip a lollipop stick into the melted candy, and press it into the middle of the cake pop. Repeat for the remaining cake pops.
Refrigerate for at least 10 minutes until the candy is firm.
Melt the remaining candy melts with the shortening in the microwave on high power for 30 seconds. Stir well. Continue heating in 30-second increments until fully melted and smooth.
One at a time, dip the chilled cake pops into the melted candy melts and gently shake off the excess. Top with sprinkles or decorations of your choice.
