Directions

  • Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish. Set aside.
  • In a medium bowl, mix up the crust by blending together the strawberry cake mix, 1/2 cup melted butter and egg. Press the crust into the greased baking dish.
  • Bake uncovered for 20 minutes until the crust is golden brown. Cool completely.
  • In a small bowl, whip the cream cheese until it is light and fluffy.
  • Combine the heavy whipping cream, powdered sugar, and vanilla n the bowl of a stand mixer fitted with the whisk attachment. Whip mixture on high speed for 3-5 minutes until stiff peaks form.
  • Use a stiff spatula to fold the whipped cream cheese into the whipped cream until they are fully combined. Spread over cooled crust. Refrigerate until ready to serve.
  • At serving time, crush up Oreos then add in 1/4 cup melted butter and the package of dry Jello mix. Shake well until all the crumbs are moistened. Sprinkle the crumbs over the filling. Serve immediately.

Notes

  • The dough for the crust will be very thick. Press it firmly into the pan so that it will form the crust.
  • The strawberry Jello cookie crumb topping will soften as it sits. so it's best to add the topping right before serving.
  • Leftover bars can be stored in an airtight container in the refrigerator for up to a week.
