In a large skillet, brown ground beef over medium-high heat. Drain well then return ground beef to the skillet.
Reduce the heat of the skillet to low and stir in taco seasoning and diced tomatoes. Cover and cook for about 8 minutes.
When 4 minutes are remaining, reduce the heat of the water to a gentle boil and add in the tortellini and salt. Cook for 4 minutes then drain and add to the skillet along with the cheese.
Stir well to coat everything with the sauce. Allow to cook for 1-2 minutes until the cheese melts.
Top with a squeeze of lime juice and chopped cilantro. Serve and enjoy!
