30-Minute Taco Tortellini
Ingredients
- 1 pkg 16 oz Rana 5 Cheese tortellini
- 1 lb lean ground beef
- 1 pkg taco seasoning
- 2 cans fire-roasted diced tomatoes
- 1 cup Mexican blend cheese
- 1 tsp salt
- squeeze of lime juice
- fresh chopped cilantro
Instructions
- In a large pot, bring 4 cups of water to a boil.
- In a large skillet, brown ground beef over medium-high heat. Drain well then return ground beef to the skillet.
- Reduce the heat of the skillet to low and stir in taco seasoning and diced tomatoes. Cover and cook for about 8 minutes.
- When 4 minutes are remaining, reduce the heat of the water to a gentle boil and add in the tortellini and salt. Cook for 4 minutes then drain and add to the skillet along with the cheese.
- Stir well to coat everything with the sauce. Allow to cook for 1-2 minutes until the cheese melts.
- Top with a squeeze of lime juice and chopped cilantro. Serve and enjoy!
