  • In a large pot, bring 4 cups of water to a boil.
  • In a large skillet, brown ground beef over medium-high heat. Drain well then return ground beef to the skillet.
  • Reduce the heat of the skillet to low and stir in taco seasoning and diced tomatoes. Cover and cook for about 8 minutes.
  • When 4 minutes are remaining, reduce the heat of the water to a gentle boil and add in the tortellini and salt. Cook for 4 minutes then drain and add to the skillet along with the cheese.
  • Stir well to coat everything with the sauce. Allow to cook for 1-2 minutes until the cheese melts.
  • Top with a squeeze of lime juice and chopped cilantro. Serve and enjoy!
