Preheat the oven to 350 degrees F. Grease a 9x13-inch casserole dish; set aside.
In a microwave safe bowl, heat the cream cheese and butter for 20-30 seconds until soft then whisk until smooth.
In a large mixing bowl, stir together the cream cheese mixture, cream of chicken soup, garlic, Italian dressing mix, chicken stock, salt and pepper until smooth. Gently fold in the cooked chicken, rice, and half of the cheese.
Spread the mixture into the prepared dish. Sprinkle remaining cheese on top.
Cover with foil and bake for 20-25 minutes, remove the foil and cook for 10 more minutes until the cheese is melted. You can also broil for a few minutes to brown the cheese.
