  • Preheat the oven to 350 degrees F. Line 16 muffin cups with parchment paper liners or grease well. Set aside.
  • In a large bowl, stir together melted butter and sugar. Add egg, mashed bananas, and vanilla then stir to combine.
  • Slowly add in flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined.
  • Fold in chocolate chips and chopped walnuts. Divide batter between 16 prepared muffin cups, filling each one 2/3 full.
  • Bake uncovered for 25-30 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
