Beaver Nuggets (Buc-ee’s Copycat)

  • Preheat oven to 250°F. Line a large baking sheet with parchment paper.
  • Place corn puffs in a very large mixing bowl and set aside.
  • In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring mixture to a gentle boil and cook for 3–4 minutes, stirring constantly.
  • Remove from heat and immediately stir in baking soda and vanilla extract. The mixture will foam up.
  • Quickly pour the caramel over the corn puffs and gently stir until evenly coated.
  • Spread mixture evenly onto the prepared baking sheet.
  • Bake for 30 minutes, stirring once halfway through baking.
  • Remove from oven and allow to cool completely. Break apart and store in an airtight container.

Notes

Do not skip the baking step — this is what makes the nuggets crispy instead of sticky.
Work quickly when adding the caramel to the cereal so it coats evenly.
Allow nuggets to cool fully before storing to maintain crunch.
Store in an airtight container at room temperature for up to 5 days.
