Cheesy Chicken Flautas

Ingredients
 

  • 3 pounds chicken breasts, cooked and shredded
  • ½ cup salsa
  • 8 oz cream cheese
  • 1 cup fiesta blend cheese or Monterey Jack, shredded
  • 1 tsp cumin
  • salt and pepper, to taste
  • 16 burrito-sized flour tortillas

Directions

  • Preheat oven to 400 degrees F. 
  • In microwave-safe bowl, combine shredded chicken, salsa, cream cheese, shredded cheese, cumin, salt and pepper. Microwave mixture 2-3 minutes until cheese is melted and chicken is heated through. 
  • Spoon about 3 tablespoons for chicken mixture on bottom third of each tortilla. Roll up tightly and cut in half. Place each Flauta seam-side down on rimmed baking sheet. 
  • Spray chicken flautas with cooking spray. Bake 18-20 minutes until flautas are crispy. 
  • For party presentation, place flautas on a baking sheet in a ring shape, adding shredded cheese between each layer. (Place a small bowl in the middle of the ring while you lay out your flautas but remember to remove the bowl before baking.)  Bake additional 5 minutes to melt the cheese.
