  • Bring a large pot of salted water to a boil and cook the egg noodles according to package directions. Drain and set aside.
  • While the pasta cooks, make the sauce. In a large skillet or Dutch oven over medium-high heat, cook the ground beef until browned and fully cooked, breaking it up as it cooks. Drain excess grease.
  • Reduce the heat to medium and stir in the cream of chicken soup, beef broth, heavy cream, and onion soup mix until smooth and well combined.
  • Let the mixture simmer for 5 to 7 minutes, stirring occasionally, until the sauce begins to thicken.
  • Stir in the shredded cheddar and colby jack cheese until melted and the sauce is creamy.
  • Add the cooked noodles to the skillet and gently toss until everything is evenly coated in the sauce.
  • Serve warm, optionally topped with fresh parsley or extra shredded cheese.

Notes

  • Pre-shredded cheese works for convenience, but freshly shredded melts more smoothly.
  • Add frozen peas or broccoli during the simmer step for an easy vegetable addition.
  • If the sauce thickens too much, stir in a splash of beef broth before serving.
