Directions

  • Preheat oven to 350°F.
  • In a large bowl, stir together the chicken, rice, cream of chicken soup, sour cream, ranch seasoning, bacon, and 1½ cups cheddar cheese until well combined.
  • Spread mixture into a greased 9x13-inch baking dish.
  • Sprinkle with the remaining ½ cup cheddar cheese.
  • In a small bowl, mix the crushed Ritz crackers and melted butter. Sprinkle evenly over the casserole.
  • Bake for 30 to 35 minutes or until hot and bubbly and the topping is golden brown.
  • Let stand for 5 minutes before serving.

Notes

  • Rotisserie chicken makes this casserole quick and easy.
  • Cooked turkey can be substituted for the chicken.
  • Sharp cheddar cheese adds the most flavor.
