  • In a 6 qt Crock Pot, add chicken breasts, half and half, chicken broth, beans, corn, and Rotel.
  • Cut the cream cheese into chunks and add to the pot along with the shredded cheese and all the spices. Stir well.
  • Cover and cook on LOW heat for 6-8 hours or HIGH heat for 3-4 hours.
  • Shred the chicken with two forks. Stir well.
  • Serve with extra cheese, sour cream, red onion, avocado, or cilantro.
