Easter Cadbury Mini Egg Blondies

  • Preheat the oven to 350 degrees F. Grease a 9x13-inch pan. Place the Cadbury Mini Eggs in a zip-top plastic baggie and use the bottom of a glass or a rolling pin to apply pressure to the candies so that they crack or split open. Do not finely crush.
  • In a large bowl using a hand mixer, cream together the butter and both kinds of sugar until light and fluffy. Blend in the eggs and vanilla until fully combined.
  • Add the flour, baking soda, and salt and mix until just combined. Use a spoon or spatula to gently stir in half of the broken Cadbury Mini Eggs, reserving the larger pieces for the top.
  • Spread the dough into the greased baking dish then top with remaining Cadbury Mini Eggs. Press the candy into the dough so that the colorful shell is facing up and the chocolate side is facing down.
  • Bake uncovered for 22-25 minutes until the blondies are golden brown on the top and the middle is set.
