Directions

  • Preheat oven to 250°F. Line a large baking sheet with parchment paper.
  • Place the corn puffs and mini pretzels in a large mixing bowl and set aside.
  • In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a gentle boil and cook for 3–4 minutes, stirring constantly.
  • Remove from heat and immediately stir in the baking soda and vanilla extract. The mixture will foam slightly.
  • Quickly pour the caramel over the cereal and pretzels. Gently stir until everything is evenly coated.
  • Spread the mixture onto the prepared baking sheet in an even layer.
  • Bake for 30 minutes, stirring once halfway through baking.
  • Remove from the oven and allow the snack mix to cool completely.
  • Once cooled, melt the white chocolate or almond bark in the microwave in 20-second intervals, stirring between each until smooth.
  • Drizzle the melted chocolate over the snack mix. Immediately sprinkle with the pastel M&M’s and Easter sprinkles.
  • Allow the chocolate to set for about 20 minutes, then break the mix into pieces and serve.

Notes

Do not skip the baking step. This is what makes the snack mix crispy instead of sticky.
Work quickly when pouring the caramel over the cereal so it coats evenly.
Allow the mix to cool completely before adding the chocolate drizzle.
Store in an airtight container at room temperature for up to 5 days.
