  • Lay out Fudge Stripe cookies stripe side up on a sheet of wax paper.
  • Melt caramels with milk in the microwave for 30 seconds. Stir until smooth. Add shredded toasted coconut and mix well.
  • Using a small cookie scoop or a spoon, pile about 2 teaspoons of the coconut mixture on top of each cookie and use the back of a spoon to spread it to cover the cookie completely. If the coconut caramel mixture becomes too thick, heat it in the microwave for 10-15 seconds until it softens.
  • In a separate bowl, melt the chocolate chips with the shortening or coconut oil by heating in the microwave for 15 seconds. Stir well. Heat for another 15 seconds and then stir until smooth. Be careful not to overheat the chocolate.
  • Drizzle the chocolate in three or four stripes over the coconut caramel layer. Allow the cookies to cool completely before serving.
