  • Preheat oven to 350 degrees F. Grease 9x13-inch baking dish.
  • Allow the sweet potato patties to defrost at room temperature for a few minutes. Slice each one in half.
  • Unroll crescent dough. Cut each triangle into two smaller triangles. You will end up with 32 dough triangles from the two packages.
  • Place a sweet potato slice on the short side of each triangle and roll up to the point, wrapping dough around each sweet potato slice.
  • Arrange crescent-wrapped sweet potatoes in the greased pan.
  • In a medium bowl, stir together melted butter, brown sugar, and cinnamon. Pour the mixture over sweet potato dumplings.
  • Pour the Sprite in the center and along the edges of the pan. (Do not pour directly on the dumplings.)
  • Bake uncovered 33-36 minutes until golden brown.

Notes

  • In place of Sprite, you can use 7-Up, Mountain Dew, or similar lemon-lime sodas. I do not recommend using diet soda in this recipe.
  • Crescent dough sheets can be used in place of crescent roll dough. Cut each sheet of dough into 16 squares and then roll up as directed.
  • If you can't find the sweet potato patties, you can make your own by slicing fresh sweet potatoes and parboiling them for about 10 minutes to slightly soften them.
  • Serve with vanilla ice cream or fresh whipped cream.
