Fresh Peach Dump Cake

  • Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish.
  • Add the sliced peaches, sugar, cornstarch, vanilla extract, almond extract, cinnamon, and salt to the prepared baking dish. Gently stir until the peaches are evenly coated, then spread them into an even layer.
  • Sprinkle the dry vanilla cake mix evenly over the peaches. Do not stir.
  • Slowly drizzle the melted butter over the cake mix, covering as much of the surface as possible.
  • Bake for 45–55 minutes, until the topping is golden brown and the peach filling is bubbling around the edges. If you notice any large dry spots after about 30 minutes, drizzle them with an additional 1–2 tablespoons of melted butter.
  • Let the dump cake cool for 15–20 minutes before serving. The peach filling will continue to thicken as it rests.

Notes

  • If the peaches are especially sweet, reduce the sugar to ⅓ cup.
  • Use ripe but still firm peaches so they hold their shape while baking.
  • For extra crunch, sprinkle ½ cup chopped pecans over the cake mix before adding the butter.
  • Serve warm with vanilla ice cream or whipped cream.
  • Cover and refrigerate leftovers for up to four days. Reheat individual servings in the microwave.
