  • In a large mixing bowl using a hand mixer, cream together the butter and sugar until light and fluffy. Add eggs and vanilla extract then blend well.
  • Slowly add in the hot cocoa mix, cocoa powder, flour, salt, baking soda, and baking powder. Mix until a thick dough forms.
  • Stir in chocolate chunks. Refrigerate cookie dough for at least 30 minutes.
  • When ready to bake, preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Roll 1 1/2 tablespoons of dough into a ball then slightly flatten and place on the baking sheet.
  • Add additional chocolate chunks and mallow bits to the top of each cookie.
  • Bake for 9-11 minutes until cookies are set around the edges.
  • Cool 5 minutes on the baking sheet then remove and cool completely.
