  • Preheat oven to 400 degrees F. Line 2 baking sheets with parchment paper; set aside.
  • In a large mixing bowl, cream together the butter and both sugars on medium speed until light and fluffy. Beat in the eggs.
  • Add in the cornstarch, baking soda, salt, and flour. Mix on low speed until just combined.
  • Stir in the chocolate chips and chopped walnuts. Refrigerate the dough for 15 minutes.
  • Using a digital kitchen scale for accuracy, measure out 6 ounces of dough and form it into a rough ball. Place the dough balls on the baking sheet about 3" apart (4-5 dough balls per cookie sheet).
  • Bake for 11-13 minutes. Cookies will look golden brown on the outside.
  • Allow cookies to cool for at least 30 minutes before removing them from the baking sheet.

Notes

Do not roll the dough into a tight ball. As long as the dough sticks together, it's good enough. The Levain Bakery cookies are irregularly shaped and this is what we're going for here.
