  • In a large mixing bowl, stir together the sour cream, mayonnaise, and garlic powder until smooth.
  • Add the drained corn, drained Rotel, bacon, cheddar cheese, and green onions.
  • Stir until everything is evenly combined.
  • Season with salt and black pepper to taste.
  • Cover and refrigerate for at least 1 hour before serving.
  • Garnish with additional bacon, cheddar cheese, and green onions if desired.

Notes

  • Be sure to drain the Rotel well to prevent the dip from becoming watery.
  • Sharp cheddar cheese provides the best flavor, but mild cheddar can also be used.
  • This dip can be made up to 24 hours in advance.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
