Peach Delight

Peach Delight is a light and creamy dessert that is delicious as it is pretty. This is a perfect recipe for all those fresh ripe peaches this time of year. Which of the four layers is your favorite? It's impossible to choose!

  • In a small bowl, mix together flour, melted butter, and pecans. Press into a greased 9X13-inch pan. Bake at 325 degrees for 25 minutes. Cool crust completely.
  • In a medium saucepan over medium heat, stir together water, sugar, cornstarch, and salt. Bring to a boil, stirring constantly. Cook until the mixture thickens. Stir in Jello and cook until completely dissolved. Remove from heat and allow to cool.
  • Mix together cream cheese, powdered sugar, and Cool Whip. Spread over cooled crust.
  • Layer sliced peaches over the cream cheese layer.
  • When the Jello mixture is cooled or just slightly warm, pour over the peaches.
  • Refrigerate for at least 2 hours, or overnight. Serve cold.

Notes

Use real butter, not margarine, for the flakiest crust.
