  • Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  • In a large bowl, combine shredded rotisserie chicken, cream of chicken soup, sour cream, and shredded cheese. Mix until well combined.
  • Spread the chicken mixture evenly into the prepared baking dish.
  • In a separate bowl, mix crushed Ritz crackers with melted butter until evenly coated.
  • Sprinkle the cracker mixture evenly over the top of the casserole.
  • Bake uncovered for 25–30 minutes, or until hot and bubbly and the topping is golden brown.
  • Let sit for 5 minutes before serving.

Notes

  • Rotisserie chicken adds extra flavor and saves time, but leftover cooked chicken works too.
  • For a complete meal, stir in 1–2 cups of steamed broccoli or frozen mixed vegetables.
  • You can substitute Greek yogurt for sour cream if desired.
  • Store leftovers in the refrigerator for up to 3 days.
