  • Preheat oven to 400 degrees F. Lightly grease a 10-inch cast iron skillet. Place the greased skillet in the oven while it is preheating.
  • In a large bowl, combine flour, cornmeal, sugar, salt, and baking powder. Stir in egg, buttermilk, and vegetable oil. Mix only until just combined. Set aside for 10 minutes.
  • Stir the batter again then pour into the hot skillet. Return the skillet to the oven and bake for 20-25 minutes until a toothpick inserted into the center comes out clean.
