Apple Pie, Oh Me Oh My

Apple Pie is the quintessential All-American dessert. It’s so popular that everyone should have their go-to recipe for the best apple pie. This is our favorite easy apple pie recipe because it’s loaded with sweet and tangy apples and has a super easy crust that tastes like homemade.

Key To Success #1 – The Apples

The most important part of any apple pie is the apples. You’ll find a lot of varieties of apples to choose.

Be sure to pick a variety that’s firm so that it won’t end up mushy when cooked.

I don’t know about you but I like my apples to have a little bit of bite in my apple pie. You know what I mean?

It’s really up to personal preference on the variety of apples that you use in your apple pie.

We like to use Golden Delicious. You could also use Granny Smith.

It’s a classic variety for apple pie but they are generally fairly tart and you may need to add a bit more sugar.

Or you could use more than one apple variety in your pie, perhaps one tart apple and one sweet apple.

Besides choosing the best variety, it’s also important to slice the apples to a consistent thickness.

The easiest way is to use an apple corer and slicer.

I have this apple slicer from Amazon and it makes the perfect apple slices for a hearty apple pie.

Key to Success #2 – Pre-cooking the Filling

For this easy apple pie, you can pre-cook the apple filling in your microwave for a few minutes to start the cooking process.

This will allow the pie to cook quicker and prevent the crust from getting too dark and dry.

Pre-cooking will also allow you to taste the filling and see if you need to add a touch more sugar or more spice.

You can also do this step on the stove top if you’d prefer.

Key to Success #3 – Crust the Easy Way

You can certainly make your own crust from scratch but I like to use a refrigerated pie crust for this recipe.

The Pillsbury refrigerated pie crust comes two to a pack, which is perfect for this double-crust Apple Pie.

Make sure you soften the crust according to package directions before you press it into the pie pan, otherwise it will not adhere properly and may break or leak.

Crimping the pie crust is another part of apple pie that seems to lead to a lot of questions.

It’s really not as complicated as it seems!

If it makes you nervous, just use a fork to press crimps all the way around the crust.

This apple pie recipe is chock-full of crisp and tangy apples with plenty of spice but it’s made easy by using a refrigerated pie crust. Oven to table in 1 hour.

Ingredients

For the crust:

  • 1 box refrigerated pie crust softened as directed on box

For the filling:

Instructions

  • Preheat oven to 425 degrees F. Place 1 pie crust in ungreased 9-inch glass pie plate and press firmly into sides and bottom.
  • Thinly slice apples into large, microwave-safe bowl. Add filling ingredients and stir together well. Microwave on HIGH for 5-6 minutes to start cooking the apples. 
  • Spoon filling into bottom crust. Top with second crust. Wrap any excess top crust under the bottom crust and press to seal. Flute edges or use fork to crimp. Cut slits into the top crust to vent.
  • Bake 45-50 minutes until apples are tender and crust is golden brown. After first 15 minutes, cover edges of crust with foil to prevent excessive browning.

Notes

Use your favorite variety of apples or a combination of varieties. We like Golden Delicious.
After cooking apples in the microwave, taste to see if you need more sugar or spice.
