Key to Success #1 – Pierce the Skin

Piercing the skin of the sweet potato before cooking will allow steam to escape during the air frying process.

you don’t do this, you’re likely to have your potato split open during cooking.

If that happens, it’ll still be just as tasty.

It just won’t look as nice.

Sweet potatoes are so firm that I usually use the tip of a sharp knife to pierce the potato in five or six places.

Try to pierce the skin at lease once on each side so that the steam has plenty of places to escape.

It sounds so complicated, but it’s really not. Just make a few holes!

Key to Success #2 – Drizzle on the Olive Oil + Sprinkle Salt

Before you start cooking your potatoes, drizzle a little olive oil on the skin then sprinkle it with kosher salt.

The olive oil will really help crisp up the skin as the potatoes cook through and will help keep the skin from burning.

You can skip this step if you’d prefer.

Air Fryer Sweet Potato with Brown Sugar

Key to Success #3 – Jazz Things Up

Make sure your sweet potato is fully cooked through before you start adding in the goodies.

It should be tender when pressed on the sides.

For a medium potato, you’ll probably need to cook it for about 30-35 minutes.

If you have a big fat potato like I had, it could take up to 45 minutes.

After it is soft, cut a slit down the middle of the potato and add your toppings.

For a brown sugar topped potato, loosen the meat of the potato and add butter then a spoonful of brown sugar.

Put the sweet potato back into the air fryer for about 5 minutes until the brown sugar gets caramelized.

Air Fryer Sweet Potato with Marshmallows

For marshmallow topped sweet potatoes, split open the cooked sweet potato then add a handful of mini marshmallows.

Put the potato back into the air fryer for just 2-3 minutes, until the marshmallows start to get toasty.

Air Fryer Sweet Potatoes cook up tender and fluffy on the inside with an incredible crispy skin. You can jazz them up by adding brown sugar or marshmallows or both!

Ingredients

  • 1-3 sweet potatoes, medium-sized
  • 1 Tbsp olive oil
  • kosher salt

Instructions

  1. Preheat air fryer to 400 degrees F.
  2. Wash sweet potatoes and pierce skin several times with a fork.
  3. Rub olive oil over skin then sprinkle with kosher salt.
  4. Place potatoes into basket of air fryer and cook at 400 degrees F for 30 minutes, turning once. Poke with a fork to check for tenderness. Cook additional 5-10 minutes until tender.

Notes

For brown sugar potatoes, slice open fully cooked potatoes and fill with a pat of butter and a spoonful of brown sugar and cook in air fryer another 5 minutes.

For marshmallow-topped potatoes, slice open cooked potatoes and fill with marshmallows then cook in air fryer another 2-3 minutes.
