Key to Success #1 – Dry the Strawberries Completely

It’s critical that your strawberries are completely dry before dipping them in the candy coating.

There are several compelling reasons for this.

First, when water is added to the mixture, the candy coating tends to seize up.

Second, damp strawberries are more likely to crack the candy covering, leaking strawberry juice onto your serving platter.

Place your strawberries in a single layer on a clean towel or a couple of paper towels after thoroughly washing them under cool running water.

Allow the strawberries to drain and dry for a few hours at room temperature.

If necessary, use more paper towels to thoroughly dry the strawberries.

I usually wash my strawberries the day before I plan to dip them in order to give them enough time to dry.

Key to Success #2 – Use Candy Melts

Instead of using actual white chocolate, we used light blue candy melts to coat our strawberries.

When it comes to dipping fruits, candy melts are considerably easier to work with and get the correct hue.

Because white chocolate is frequently a cream hue rather than pure white, whatever color you add will be blended with cream.

Unless I require a specific hue, I prefer to utilize pre-colored candy melts.

Candy melts are available at Michael’s, Hobby Lobby, several large box retailers, and on Amazon.

They are available in a variety of blue tints as well as almost any other color.

If you’re going to color your own candy melts or almond bark, be sure to use gel food coloring and keep in mind that you might need to add in some additional fat, like Crisco shortening, to maintain a good dipping consistency.

Goldfish Strawberries

Key to Success #3 – Don’t Dip These in Advance

It’s preferable to dip your strawberries in the melted candy melts no more than a couple hours before your party, if you can.

Microwave the candy melts on high for 1 minute, stirring well afterward.

Microwave in 15-second intervals, stirring after each until the candy is smooth and creamy.

Hold the strawberries by the stems and dip them in the melted candy one by one.

Turn the strawberries over to coat them well, then place them on a sheet of waxed paper.

To decorate, place a single Goldfish Cracker in the center of each strawberry then add three tiny sugar pearls in a line going up from the goldfish’s mouth.

It’ll look like your adorable goldfish are swimming happily in the blue waters.

I used the Goldfish Colors so that I would have multiple colors of goldfish, but you can use regular Goldfish crackers if that’s what you have handy.

The sugar pearls can be found at your local craft store or you can order them on Amazon.

I use a pair of precision tweezers to place the sugar pearls in the perfect spot.

They worked great and really sped up the process to make these Under the Sea Strawberries.

Ingredients

  • 24 strawberries
  • 1 pkg (12 oz) light blue candy coating
  • 24 Goldfish Colors crackers
  • 1 bottle Wilton white sugar pearls sprinkles

Instructions

  1. Wash strawberries and dry them very well.
  2. Place blue candy melts in a microwave-safe bowl and microwave on high power for 1 minute. Stir well. Microwave in 30-second increments until candies are melted and smooth.
  3. One at a time, dip the strawberries into the melted blue candy then tap off the excess. Place the strawberries on a sheet of waxed paper. Place a goldfish cracker in the center of the strawberry. Place three small sugar pearls in a row coming from the goldfish's mouth.
  4. Allow to cool and dry completely, about 15 minutes.
