It’s inspired by the Rice Krispie Treat cookies at Crumbl Cookies.
Their Rice Krispie cookies have lots of extra marshmallows that make them so gooey and sticky.
We wanted to make some that are just as good with less mess on your fingers.

🔑 Key to Success #1 – Real Butter to Grease the Pan
This Extra Marshmallowy Rice Krispie Treats recipe really elevates the traditional recipe that you might find online.
We’re going for extra flavor and extra ooey-gooey goodness.
One way that we’re delivering extra flavor is by using extra butter in the recipe as well as using butter to grease the pan.
When I talk about butter, I’m talking about real butter, not margarine.
I prefer to use salted butter almost exclusively, but you could use unsalted butter if you prefer.
Before you start making your treats, grease your 9×13-inch baking dish very well.
Rice Krispie Treats are sticky so it’s important to get the butter in all the corners of the pan as well as up the sides.
The easiest way to grease the pan is by using your hands to spread the butter all around the pan.
If you’re concerned about getting your hands messy, you can use some food-safe disposable gloves.
I use these gloves quite a lot while I’m chopping vegetables, cutting meat, or shaping food with my hands.

🔑 Key to Success #2 – Heat in the Microwave Not Stovetop
Another way this recipe differs from traditional Rice Krispie Treats is that the ingredients are melted in the microwave instead of on the stovetop.
Cooking the marshmallow mixture on the stovetop can cause the melted marshmallows to get too warm.
When the marshmallows get too hot, your Rice Krispie Treats may be too tough and chewy.
We can use the microwave to melt the marshmallows gently so that the Rice Krispie Treats are tender and the consistency is perfect.
Microwave the butter and marshmallow mixture for 1 minute on HIGH power then stir it very well.
Try to stir out as many of the lumps as you possibly can.
If you can’t get all the lumps to smooth out, microwave the mixture for an additional 30 seconds.
After you remove the marshmallow mixture from the microwave, continue stirring it until there are no more lumps.
All the marshmallows should be melted and the mixture should be completely smooth.
If you cannot achieve that, it’s okay to microwave the mixture for an additional 30 seconds.
But you really want to try to heat the marshmallows as little as possible while still allowing them to melt.
Once the marshmallow mixture is smooth, stir in the vanilla extract for extra flavor.

🔑 Key to Success #3 – Stir in Marshmallows While Mixture is Still Warm
After the melted marshmallow mixture is smooth, stir in the Rice Krispies cereal until it is thoroughly combined.
Next, stir in the remaining mini marshmallows.
These additional marshmallows are not intended to melt completely.
They will simply soften and melt slightly so that they will complement the treats.
Stir in the marshmallows only until they are distributed throughout the mixture.
Be careful not to stir them so much that they melt into the Rice Krispies.
You want them to stay more or less whole.

Finally, press the cereal mixture into the greased pan.
Again, I use a food-safe disposable glove to keep my hands clean.
Rub some butter between your hands so that the mixture won’t stick.
Next, pour the cereal mixture into the pan and pat it with your greased hands to spread it to the edges of the pan.
I pat it into place pretty aggressively so that the mixture doesn’t have time to stick to my hands as I’m working.
Once the mixture is spread evenly in the pan, you can go back over it and press it firmly into the pan.
The better you press it down, the more it will stick together.

Ingredients
- 4 Tbsp butter
- 16 oz mini marshmallows (divided)
- 1 tsp vanilla extract
- 6 cups Rice Krispies cereal
Instructions
- In a large microwave-safe bowl, melt butter on high power for 45 seconds. Stir in 5 1/2 cups of mini marshmallows. Coat well with the melted butter. Microwave on high power for 1 minute. Stir well. Heat for another 30 seconds. Add vanilla extract then stir until smooth.
- Stir in Rice Krispies cereal until thoroughly combined. While the mixture is still warm, stir in the remaining mini marshmallows until they are distributed throughout the mixture.
- Firmly press the Rice Krispie mixture into a 9x13-inch pan that has been well-greased (with butter for extra flavor!)
