Air Fryer Zucchini and Yellow Squash is a great vegetable side dish that cooks up perfectly in the Air Fryer. It’s a great way to get your veggies for the day, and they’re ready in under 30 minutes. Mom would approve!

Oh man, yellow squash has got to be my favorite summer vegetable.

Unless you count watermelon as a vegetable, which it isn’t.

Or if you count yellow squash as a fruit, which it technically is!

But I digress.

The yellow squash is a favorite of mine because I like the softer texture and the milder flavor.

You can really play with the flavor of yellow squash by adding more spices, but I feel like it’s a true classic southern dish when cooked with only a little butter or oil, salt, pepper, and maybe some onion.

Today, I paired the yellow squash with some zucchini because that’s what I had on hand, but you can certainly add other vegetables to this recipe.

Key to Success #1 – Cut the Veggies Uniformly

When cooking zucchini and yellow squash in the Air Fryer, it’s important to slice the vegetables into evenly sized pieces.

This will allow them to cook more evenly in the Air Fryer.

An even cook time means that all the vegetables will be ready at about the same time.

I prefer to cut my squash into half moons that are about a half-inch thick when I’m cooking them in the Air Fryer.

If I’m going to saute them in a skillet, I prefer to slice them into thin coins.

I just think they hold up better in the Air Fryer if they are a little thicker.

Key to Success #2 – Add a Bit of Olive Oil

A little oil goes a long way when you’re air frying vegetables.

Adding a little oil will keep the vegetables from sticking to one another or to the basket.

And it’ll also add some flavor to your dish.

All you need is 2-3 teaspoons of olive oil. I use a non-aerosol spray bottle to distribute my oil evenly.

I do not recommend using a commercial cooking spray because it tends to leave a film on the Air Fryer basket that is hard to get off.

Key to Success #3 – Shake Shake Shake

While you’re cooking the squash and zucchini in your Air Fryer, it’s important to shake the basket frequently to keep the vegetables cooking evenly.

If you don’t shake the basket often enough, you’ll get some squash that is cooked more than others.

Just pull the basket out a bit and give it a good, hard shake.

This is another reason I like to cut the vegetables into sturdy half-moons.

They hold up much better when shaken.

I shake the basket about every ten minutes.

You can shake it more often than that if you’d prefer.
