Peach Delight is a light and creamy dessert that is delicious as it is pretty. This is a perfect recipe for all those fresh ripe peaches this time of year. Which of the four layers is your favorite? It's impossible to choose!
In a small bowl, mix together flour, melted butter, and pecans. Press into a greased 9X13-inch pan. Bake at 325 degrees for 25 minutes. Cool crust completely.
In a medium saucepan over medium heat, stir together water, sugar, cornstarch, and salt. Bring to a boil, stirring constantly. Cook until the mixture thickens. Stir in Jello and cook until completely dissolved. Remove from heat and allow to cool.
Mix together cream cheese, powdered sugar, and Cool Whip. Spread over cooled crust.
Layer sliced peaches over the cream cheese layer.
When the Jello mixture is cooled or just slightly warm, pour over the peaches.
Refrigerate for at least 2 hours, or overnight. Serve cold.
Notes
Use real butter, not margarine, for the flakiest crust.
