  • Pour carrots into a medium saucepan and cover with salted water. Bring to a boil over medium heat and cook about 15 minutes, until carrots are tender. Drain well.
  • Return carrots to saucepan and reduce heat to medium-low. Add butter, brown sugar, and honey. Stir well. Cook another 5 minutes until butter is melted and sauce is combined.

Notes

Diabetic substitutions: 
  • Try reducing brown sugar to 1/3 cup
  • Try reducing honey to 2 tablespoons
  • Use less salt
