  • Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan and set aside.
  • In a medium bowl, whisk together the eggs, sugar, and sour cream. Slowly drizzle in the oil while whisking.
  • Stir in the lemon zest and lemon extract.
  • Add in the salt and baking powder. Slowly add in the flour while stirring just to combine.
  • Pour batter into greased loaf pan. Bake 50-55 minutes until a toothpick inserted into the center comes out clean.
  • Allow bread to cool in the pan for 10 minutes then remove to a wire rack to cool completely.
  • To make the icing, combine powdered sugar and lemon juice. Stir until fully combined and smooth.
  • Spread icing over bread when completely cool.
