Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan and set aside.
In a medium bowl, whisk together the eggs, sugar, and sour cream. Slowly drizzle in the oil while whisking.
Stir in the lemon zest and lemon extract.
Add in the salt and baking powder. Slowly add in the flour while stirring just to combine.
Pour batter into greased loaf pan. Bake 50-55 minutes until a toothpick inserted into the center comes out clean.
Allow bread to cool in the pan for 10 minutes then remove to a wire rack to cool completely.
To make the icing, combine powdered sugar and lemon juice. Stir until fully combined and smooth.
Spread icing over bread when completely cool.
