Ingredients
 

  • 1 rotisserie chicken
  • 1 cup half & half
  • 32 oz chicken broth
  • 2 cans, 15 oz each Great Northern beans, drained
  • 1 can, 15 oz whole kernel corn, drained
  • 2 cans, 10 oz each Rotel tomatoes and green chiles
  • 8 oz cream cheese
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp onion powder
  • 2 ½ tsp garlic powder
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 ½ tsp smoked paprika

Directions

  • De-bone the chicken and tear it into bite-sized pieces.
  • In a large pot, add the chicken, half and half, chicken broth, beans, corn, and Rotel tomatoes.
  • Cut the cream cheese into chunks and add it to the pot along with the shredded cheese and all the spices. Stir well.
  • Cover and cook on a LOW simmer for about 30 minutes until the cheese is melted.
  • Serve with extra cheese, sour cream, red onion, avocado, or cilantro.
