White Chicken Chili with Cream Cheese
Ingredients
- 1 rotisserie chicken
- 1 cup half & half
- 32 oz chicken broth
- 2 cans 15 oz each Great Northern beans, drained
- 1 can 15 oz whole kernel corn, drained
- 2 cans 10 oz each Rotel tomatoes and green chiles
- 8 oz cream cheese
- 2 cups shredded sharp cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp onion powder
- 2 1/2 tsp garlic powder
- 2 tsp ground cumin
- 2 tsp chili powder
- 2 1/2 tsp smoked paprika
Instructions
- De-bone the chicken and tear it into bite-sized pieces.
- In a large pot, add the chicken, half and half, chicken broth, beans, corn, and Rotel tomatoes.
- Cut the cream cheese into chunks and add it to the pot along with the shredded cheese and all the spices. Stir well.
- Cover and cook on a LOW simmer for about 30 minutes until the cheese is melted.
- Serve with extra cheese, sour cream, red onion, avocado, or cilantro.
