  • In a medium saucepan, combine rinsed jasmine rice, coconut milk, water, and salt. Bring to a boil. Reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork.
  • While the rice cooks, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil in a large skillet. Bring to a gentle simmer over medium heat.
  • Whisk together cornstarch and cold water in a small bowl. Stir into the sauce and cook for 1 to 2 minutes, until thickened. Add shredded chicken and stir until coated and heated through.
  • Divide the rice among six meal prep containers. Top with honey garlic chicken, broccoli, and shredded carrots. Spoon any remaining sauce over the bowls and garnish with green onions and sesame seeds.

  • Store in the refrigerator for up to 4 days.
  • Freeze for up to 3 months.
  • Reheat in the microwave for 2 to 3 minutes or until heated through.
