Peeps Easter Brownies

Ingredients
 

  • 2 boxes (18 oz each) chewy fudge brownie mix
  • 1 ⅓ cups vegetable oil
  • 4 eggs
  • 6 Tbsp water
  • 16 oz can vanilla frosting
  • gel food coloring in Easter colors, blue, yellow, pink, and purple
  • Easter sprinkles
  • 16 Peeps Marshmallow Bunnies

Directions

  • Preheat the oven to 325°F. Line a 17×11-inch rimmed baking sheet with parchment paper or spray with nonstick cooking spray.
  • In a large bowl, stir together the brownie mixes, vegetable oil, eggs, and water until well blended. Spread the batter evenly into the prepared pan.
  • Bake for 30–35 minutes, or until a toothpick inserted about 2 inches from the edge comes out clean. The center may look slightly soft and that’s perfect for chewy brownies.
  • Let the brownies cool completely. For cleaner cuts, refrigerate for 30–45 minutes before cutting.
  • Use a 4 x 2¾-inch egg-shaped cookie cutter to cut 16 egg-shaped brownies. You can also use a sharp knife to cut egg shapes, just be sure each brownie is slightly larger than the Peep bunny so it looks like an egg base.
  • Divide the frosting into small bowls and tint each with gel food coloring. If the frosting feels too thick, stir in 1/2–1 teaspoon of milk to smooth it out.
  • Frost each brownie egg, place a Peep bunny on top, and decorate the exposed frosting with Easter sprinkles.

Notes

  • Get creative with shapes! You can use chick, bunny, or oval cutters, just make sure the brownie base is large enough to support the Peep.
  • Chilling the brownies before cutting helps prevent crumbling and keeps the edges neat.
  • These brownies are best assembled the same day for the freshest look, but the brownies themselves can be baked a day ahead.
