Today, I wanted to share the recipe for delicious White Chocolate Macadamia Cookies. These cookies are golden brown around the edges and thick and chewy in the center. They are absolutely exploding with chocolate and nut goodness.

I’d just started mixing up my butter and sugar when the beater on my mixer came apart! That was totally crazy. It’s basically a brand new Hamilton Beach hand mixer! I just got at Christmas. Brand new!

Anyway, let’s get into the recipe.

The Basics

These White Chocolate Macadamia Nut cookies start with creaming together the butter and sugar. Make sure your butter is softened but not melted AT ALL. Melted butter will make your cookies flat and you don’t want that. You want them to be nice and fluffy so that you can have a taaaaalllll cookie stack.

The Secret Ingredient

The real secret to this recipe is the addition of a little almond extract. The almond extract brings out the flavor of the white chocolate and the macadamia nuts without overpowering them.

The Goodies

And let’s talk about the white chocolate and the macadamia nuts. You’ll use up to 2 cups of white chocolate chips and 1 1/2 cups of macadamia nuts. I used a full 6-ounce package of Mauna Loa macadamia nuts. It was the perfect amount to make cookies that are full of flavor.

Make sure you use a high-quality white chocolate. You’ll want to make sure your white chocolate is good quality so that it will work well with the flavor of your macadamia nuts.

  • Preheat oven to 350 degrees. 
  • Cream together butter and sugar. Add eggs, vanilla, and almond extract and mix well. 
  • Add salt, baking powder, and flour and mix until just blended.
  • Stir in white chocolate chips and macadamia nuts. Drop by tablespoon onto ungreased cookie sheet. 
  • Bake 10 minutes until edges are golden brown.
