The other day, one of my neighbors was giving away some fresh squash from his garden.

But I was too late!
I was disappointed that I didn’t get any because fresh yellow summer squash is so good and so easy to make in the Air Fryer.
Summer squash is one of my favorite veggies, but when I’m making other dishes, I don’t have the time to babysit the squash in a skillet on the stove.
Now that I have an Air Fryer, I don’t have to babysit my food.
I was just throw the squash in the Air Fryer, shake it a few times, and let it cook to perfection.

Air Fryer Yellow Squash
Ingredients
- 2-3 pounds yellow squash
- 2-3 tsp extra virgin olive oil
- kosher salt and black pepper, or seasonings of your choice
Directions
- Clean squash and cut into 1/2 inch half-moons. Toss squash with olive oil. Add salt.
- Place squash into the Air Fryer bin. Set temperature to 400 degrees F. Set timer for 10 minutes. After 10 minutes, shake bin to redistribute squash and prevent over-browning.
- Cook another 10 minutes then shake again. Check squash for tenderness and cook another 5-10 minutes until tender. Total cook time is 25-30 minutes.
