Key to Success #1 – Marinate the Pineapple

This easy recipe starts with marinating the fresh pineapple to add plenty of flavor.

Drain the pineapple well then place them in a medium-sized bowl.

Add in the brown sugar, honey, and lime, and stir well.

Make sure the pineapple is completely coated with the marinade.

Next, place a lid on the bowl and put it into the refrigerator for at least an hour.

You can leave the marinated pineapple in the refrigerator for up to 24 hours before cooking it.

If your pineapple will marinate for more than a hour, I would recommend stirring the pineapple a couple of times while it is marinating.

Key to Success #2 – Make the Lime Dip

The lime dip starts with 4 ounces of softened cream cheese.

The easiest way to soften cream cheese is to allow it to sit out on the countertop for an hour or more.

If you are running short on time, you can soften the cream cheese in the microwave.

Heat the cream cheese on the defrost setting for 1 minute then stir well.

Next, stir in the yogurt, honey, brown sugar, and lime juice.

You should be able to stir the dip together without using an electric mixer, but you can use an electric mixer if you prefer it.

Once the dip is thoroughly mixed, cover and refrigerate it until you are ready to serve it.

Key to Success #3 – Don’t Forget to Preheat the Air Fryer

When you are ready to cook your Brazilian Pineapple, start by preheating the air fryer to 400 degrees F.

Allow it to preheat for about 5 minutes.

Next, drain the pineapple well.

Be sure to discard the marinade. You won’t need the marinade any longer.

Place the pineapple in a single layer in the air fryer basket.

You may need to cook the pineapple in multiple batches if the pineapple chunks won’t fit in a single layer in your air fryer.

Air fry the pineapple for 10 minutes until it is roasted and starting to brown.

  • Drain pineapple chunks well then place into a medium bowl. Add 1/4 cup brown sugar, 3 Tbsp honey, and 2 Tbsp lime juice. Stir to coat. Cover and refrigerate for 1 hour.
  • In a small bowl, beat together the cream cheese, yogurt, honey, brown sugar, and lime juice. Stir until smooth. Cover and refrigerate until ready to serve.
  • Preheat air fryer to 400 degrees F.
  • Drain and discard the marinade from the pineapple chunks.
  • Place the pineapple chunks in a single layer in the air fryer basket. May need to cook separate batches if they won’t all fit in a single layer.
  • Cook at 400 degrees F for 10 minutes.
  • Serve warm with lime dip.
