Here’s how I do it:
🔑 Key to Success #1 – Stir Caramel Constantly
Making Caramel Churro Chex Mix is a surprisingly easy and delicious snack.
To begin, you will need a medium-sized saucepan, butter, brown sugar, corn syrup, baking soda, and salt.
In the saucepan, combine the butter, brown sugar and corn syrup.
Place the pan over medium heat and let the mixture come to a boil.
As it begins to boil be sure to stir it constantly.
Boil the caramel for one minute while continuing to stir it frequently.
Once the time has passed remove the pan from heat and add in your baking soda and salt.
Make sure you mix them well into the caramel until they are completely incorporated.
The next step is very important—continually stirring the caramel as it cooks!
This will ensure that all of the ingredients have been mixed together correctly and your caramel doesn’t burn.
The importance of stirring cannot be understated as this will also help prevent any burning or scorching of your mixture in its final stages of cooking.
Additionally, it will help make sure that all of those notes of churro flavor are evenly dispersed throughout your snack mix!

Pour the hot caramel mixture over the cereal in batches and stir gently to coat each piece evenly.
Once all of your cereal has been covered with the caramel mixture, spread out onto a large baking sheet with sides.

The cinnamon sugar is sort of the icing on top of this Caramel Churro Chex Mix.
After you spread the caramel-coated Chex onto the baking pan, go ahead and sprinkle the cinnamon sugar on top.
Lay it on thick.
You want the Chex to be fully covered with cinnamon sugar like you would for a traditional churro.
Sprinkle on the cinnamon sugar then pop the pan into the oven to bake for 5 minutes.
After 5 minutes, remove the pan from the oven and stir the Chex well to redistribute the caramel sauce.
Return the pan to the oven and cook for another 3-5 minutes until the Chex Mix is golden brown.
Spread the hot Caramel Churro Chex Mix onto a sheet of wax paper to allow it to cool completely.
Once your Caramel Churro Chex Mix is cool, you can add in other mix-ins that you enjoy.

Churro Chex Mix
Ingredients
- 4 ½ cups Rice Chex cereal
- 4 ½ cups Corn Chex cereal
- 1 cup light brown sugar
- ½ cup butter
- ½ cup light corn syrup
- ¼ tsp baking soda
- ½ tsp salt
- ⅔ cup granulated sugar
- 2 tsp cinnamon
Directions
- Preheat oven to 350 degrees F. Line large baking sheet with foil and spray with cooking spray. In small bowl, combine cinnamon and sugar. Place cereal in large bowl. Set aside.
- In medium-sized saucepan, combine butter, brown sugar, and corn syrup. Heat over medium heat until mixture comes to a boil. Let boil for 1 minute, stirring constantly. Remove from heat and add baking soda and salt. Stir well.
- Pour mixture over cereal and stir gently to coat. Spread cereal onto foil-covered baking sheet. Sprinkle with cinnamon and sugar.
- Bake for 5 minutes then stir well. Bake another 3-5 minutes until golden brown. Spread Churro Chex Mix out onto waxed paper to cool completely.
