Doritos Chicken Casserole
Ingredients
- 14.5 oz bag Nacho Cheese Doritos, lightly crushed
- 3 cups cooked chicken, chopped or shredded
- 2 cups shredded Mexican cheese blend, divided
- 10 oz can Rotel diced tomatoes with green chiles, undrained
- 15 oz can whole kernel corn, drained
- 10.5 oz can cream of chicken soup
- 10.5 oz can cheddar cheese soup
- 8 oz sour cream
Directions
- Preheat oven to 350°F. Lightly spray a 9×13-inch baking dish with cooking spray.
- Spread half of the crushed Doritos evenly in the bottom of the prepared baking dish.
- In a large bowl, stir together the chicken, 1 cup of the shredded cheese, Rotel (with juices), corn, cream of chicken soup, cheddar cheese soup, and sour cream until well combined.
- Spread the chicken mixture evenly over the Doritos layer.
- Top with the remaining crushed Doritos.
- Bake uncovered for 20 minutes.
- Sprinkle the remaining 1 cup of cheese over the top and return to the oven for 5–10 minutes, or until the cheese is melted and bubbly.
- Let sit for 5–10 minutes before serving.
